Delicious, inexpensive, quick to make, great as both an accompaniment and a solo snack - what's not to love about pickled veggies? Adapted a Serious Eats recipe, waited 48 hours (well, more like 72, since we forgot about them for a day), then enjoyed!
1 lb. carrots, sliced to fit jar
1 large onion, about 6-8 oz, sliced into half-rings
1 cup white vinegar
1 cup water

Modified this recipe (and seriously lessened the cayenne - and a good thing too, since one full teaspoon would have been inedible for me) to make a quick, easy weekday lunch staple. No need to be super-exact with the recipe, either.

1/4 large onion, diced (about 2/3 cup)
5 garlic cloves, minced (about 1 heaping tablespoon)

When the local Harris Teeter restocked after the blizzard, the first thing I went for was chicken thighs. The second was the bunches of leeks that had been waiting patiently in the vegetable drawer of the fridge.

The Tuesday after Snowzilla 2016, the meat shelves had been picked nearly bare. Happily, I found a couple of lamb shanks - not quite large enough for a Roald Dahl story, but sizeable nonetheless. A few variations on this New York Times recipe resulted in a hearty, delicious meal that was perfect for a snowbound day.

2 large lamb shanks (about 3 lbs. total)
1 large onion, sliced

First snow day of the winter, and I was craving soup. Fortunately I had most of the makings of this recipe on hand. My variation, below, turned out really well -- rich and chickeny, with just a barely sour tang.
1 tablespoon vegetable oil
1/2 onion, chopped
2 heaping tablespoons ginger, julienned
1.5 lb. chicken (four bone-in thighs)
2 lb. daikon (two big roots), chopped into 1-2 in. SGhttp://www.blogger.com/profile/10726237463029036196noreply@blogger.com0tag:blogger.com,1999:blog-6371138645676024320.post-39337591225072219642014-03-28T22:32:00.002-04:002015-02-17T16:40:37.824-05:00Quick Lunch: Mackerel Fried Rice
One of the pleasures of having a day off is making a quick lunch from things in the fridge and pantry. While I don't have a wok and was too hungry to brown this more thoroughly, it was still tasty. It was also a welcome reminder of how easy and fulfilling it is to cook.
1-1/2 T vegetable oil
2 fat scallions
2 garlic cloves, minced

Chicken not pictured - this was a meatless helping for breakfast.
Based on the contents of our fridge, I refined this afritada recipe, with happy results. Turned out perfectly, with the vegetables cooked through but still firm. And like all good stews, it tasted even better the next day.

The lesson I learned yesterday was that I'd been undercooking my pasta sauces. This time, I waited an extra 10 or so minutes till the sauce was thick and, well, saucy, pretty much all the fluid evaporated and bits of crust were starting to form on the bottom of the pan. Technically, the caviar - not Beluga, just capelin from the corner store - came out of a jar, but the basic idea of a pantry-only dish applies. This super-easy dish will become a staple, I'm sure - it's filling, quick and luxurious without being heavy. One of the things I enjoy most about at-home comp days is making a quick lunch. Had to use up a cup and a half of sour cream (bought for this New Year's Eve recipe) - lo and behold, I find this recipe in a text file on my desktop. Given how often I end up sauteing garlic, onions, sundry spices and the contents of various tins in a frying pan, it's inexcusable this feature is so late in coming. This quick but luxurious recipe was the perfect treat for New Year's Eve dinner, and went wonderfully with some rice and a glass of dry sparkling wine. John was feeling poorly and the leeks were on their last legs - time for chicken soup! Sauteeing the aromatics in a couple of tablespoons of butter gave the broth some richness, but not enough to roil an upset tummy.
